Yarra Valley Chardonnay

Journey Wines Yarra Valley Chardonnay is hand harvested from several sites in the Yarra Valley including the Briarty Hill, Willowlake and Lone Star Creek Vineyards.
Whole bunches of fruit are pressed while cool. The juice is settled for around 15 hours, then racked to new and seasoned French oak puncheons with a high solids content.
Fermentation occurs with wild yeasts at relatively low temperatures to maintain fruit freshness. The wine then matures in barrel on lees for 10 months with occasional stirring during the early stages to enhance its complexity.
The wine is sulphured to prevent malolactic fermentation, and there is no fining prior to bottling.
Pale straw with green tinges, Journey Wines Yarra Valley Chardonnay has stone fruit flavours, tight citrus acidity and lightly spicy oak. Cellaring potential is five years.
