Eldridge Estate Pinot Noir is sourced from six different Pinot Noir clones in the estate vineyard at Red Hill on the Mornington Peninsula.
The vineyard soil is red clay volcanic loam on a north facing slope. At harvest all the handpicked Pinot Noir clones are mixed together.
The fruit is destemmed with the berries dropped into the vat whole. The skin, juice and berries have a pre-ferment soak of three days. They ferment with wild yeasts for two weeks with daily plunging.
The wine is pressed in an airbag press into French oak barrels for malolactic fermentation and maturation.
Bright crimson, Eldridge Estate Pinot Noir has refined balance, red fruit flavours and a long finish. Cellaring potential is seven years.
