Intrinsic Pinot Noir
Wine
Eastern Peake Intrinsic Pinot Noir is handpicked from the estate vineyard at Coghills Creek in Ballarat. It blends fruit from three blocks, planted in 1983, 1989 and 1994.
Most of the fruit is destemmed and left as whole berries for fermentation. Smaller portions are destemmed and crushed, or included as whole bunches. All parcels ferment with wild yeasts in wax-lined concrete open fermenters.
After 3-4 weeks on skins, the wine is pressed directly to barrel for natural malolactic fermentation. After ageing for 12 months in barrel, the wine is racked to tank to age for a further six months before bottling.
Clear ruby red, Eastern Peake Intrinsic Pinot Noir's pure fruit flavours are framed by fine tannins, bright acidity and spicy length. Cellaring potential is 10 years.
