Coombe Farm Tribute Series Nellie Melba Blanc De Blancs honours famous Australian opera singer Dame Nellie Melba, who built Coombe Cottage in 1912. Her descendants still own and operate the estate.
Estate grown Chardonnay fruit is handpicked at the optimum balance of sugar and acidity. The wine is made by méthode traditionnelle, where the base wine sees a secondary fermentation in the bottle to produce natural effervescence.
For a minimum of 30 months, the wine is bottle aged on lees. In preparation for release, the lees are removed and a small amount of a sugar mixture (dosage) is added.
Pale straw, Coombe Farm Tribute Series Nellie Melba Blanc De Blancs has delicate citrus flavours with creamy hints and pristine acidity. Cellaring potential is five years from release.
