Schubert Chardonnay

Bloodwood Schubert Chardonnay is grown on an undulating slope of the Schubert Vineyard in Orange. The site is named in honour of legendary Australian winemaker Max Schubert.
The fruit is cooled and whole bunch pressed. After settling overnight, the juice is racked to begin natural fermentation in tank before it is sent to new French oak barrels.
The barrels are held in a warming room during fermentation – critical to keep the natural yeasts active through chilly autumn nights. At dryness the wine is sulphured, stirred and moved to the winery's cool maturation cellar to age for 18 months.
The wine stays in contact with fine lees with regular topping up and stirring. Bench trials determine the final blend, which is then prepared for bottling.
Bright green, Bloodwood Schubert Chardonnay has juicy stone fruit flavours, gentle oak infused citrus and complex texture. Cellaring potential is five years.
