Cape Grace Reserve Cabernet Sauvignon is estate grown at the winery's Wilyabrup vineyard in Margaret River, planted in 1996. It is the culmination of founders Robert and Karen Karri-Davis's long term vision.
After waiting many years for their vines to reach maturity and produce fruit of the necessary depth and concentration, in 2012 they made their first Reserve Cabernet Sauvignon.
The fruit is harvested in the cool of the morning then sorted, destemmed and placed in an open fermenter. It is inoculated with a yeast strain from Bordeaux in France.
The fermenting juice is hand plunged up to four times daily. Post ferment the wine remains on skins for a further two weeks to gently extract colour, flavour and complex tannins.
The wine is basket pressed directly to barrel for malolactic fermentation. Once racked, it is returned to new French oak to mature for 16 months. Typically just two small barrels are chosen for the final blend.
Deep red, Cape Grace Reserve Cabernet Sauvignon is medium bodied with dark fruit flavours, elegant red berry acidity and fine, silky tannins. Cellaring potential is 15 years.
