Evans & Tate Redbrook Reserve Chardonnay is selectively handpicked at dawn from the Redbrook Vineyard in the heart of Wilyabrup, Margaret River.

The fruit is gently airbag pressed, with the free run juice continuously tasted to determine when the optimum flavour is reached. The juice is sent straight to new French oak barrels for wild fermentation, imparting aromatic and textural complexity.

Once the ferment is complete, the wine receives fortnightly lees stirring in barrel for up to 10 months. This develops further complexity in the end wine.

Pale straw green, Evans & Tate Redbrook Reserve Chardonnay has delicate but complex layers of fruit, subtle dried herbs and toasted spice. Cellaring potential is seven years.
