Evans & Tate Redbrook Reserve Cabernet Sauvignon is sourced from the winery's historic Redbrook Vineyard at Wilyabrup in Margaret River. First planted in 1974, it is home to some of the region's oldest vines.
The fruit is cold soaked in a small static fermenter for several days, maximizing colour intensity, aroma and flavour in the juice. After fermentation, it sees several weeks of post-ferment maceration until the desired style is achieved.
Once pressed, the wine is transferred to new and seasoned French oak hogsheads where it sees a short malolactic fermentation and 12-15 months of ageing. It is racked every three months.
Each individual barrel is tasted, and only the best are selected for the final blend. After bottling, the wine is matured further prior to release.
Deep purple, Evans & Tate Redbrook Reserve Cabernet Sauvignon is medium bodied with great length, finishing with a dry tannin grip. Cellaring potential is 15 years.
