Redbrook Estate Cabernet Merlot

Evans & Tate Redbrook Estate Cabernet Merlot is a blend of selectively harvested Margaret River Cabernet Sauvignon and Merlot with a splash of Malbec.

Each variety is vinified separately. The Cabernet is harvested late in the morning and delivered to the winery warm to ensure it ferments evenly. The Merlot and Malbec is harvested in the cool early morning then cold soaked.

Fermentation occurs over 10 days, with the Merlot and Malbec seeing partial wild fermentation. The Cabernet remains on skins for three weeks to ensure a vibrant colour in the final wine.

All components are then matured in French oak for up to 15 months. Each barrel is assessed individually, with only the best selected for blending and bottling.

Rich red, Evans & Tate Redbrook Estate Cabernet Merlot is medium to full bodied with intense fruit flavours and seamless fine tannins. Cellaring potential is five years.
