Ashbrook Estate Cabernet Sauvignon is estate grown at Wilyabrup in Margaret River. It blends fruit from the 'Old Cab' Houghton clone vines (planted in 1976) and the 'Young Cab' vines (planted in 1998).
In the Bordeaux style, the wine is mostly Cabernet Sauvignon with small parcels of Merlot, Cabernet Franc and Petit Verdot. The grapes are handpicked.
Fermentation occurs in open, temperature controlled stainless steel tanks with a selected yeast. The cap of grape skins is gently plunged every three hours. The wine is racked off skins to complete malolactic fermentation in tank.
It then matures in new and seasoned French oak barrels for a minimum of 18 months. After bottling, the wine is aged further in a temperature controlled cellar.
Deep inky red, Ashbrook Estate Cabernet Sauvignon tastes of ripe red fruits and elegant spice, with fine tannins creating a velvety texture. Cellaring potential is 10 years.
