Mayford Chardonnay is estate grown on a single vineyard near Porepunkah, located in the cool southern foothills of the Victorian Alpine Valleys.
The fruit is handpicked in small parcels over a period of several weeks. Each parcel is processed and matured separately in the winery.
The fruit is chilled overnight and whole bunch pressed. The juice is filled sequentially to new and seasoned French oak so that no two barrels are alike. Fermentation takes place with naturally occurring yeasts.
Partial malolactic fermentation is encouraged to build structure, with lees stirring adding freshness and a creamy texture. The wine spends one year maturing in barrel.
Pale straw, Mayford Chardonnay has generous weight, with luscious fruit flavours, silky texture and balanced acidity. Cellaring potential is eight years.
