Farrside Pinot Noir
Wine
By Farr Farrside Pinot Noir is grown on a north-east facing slope of limestone topped with black volcanic soil. The vines, planted in the Moorabool Valley in 2001, run east-west.
The fruit is sorted in the vineyard. Half is destemmed and cold soaked, the remainder left as whole bunches. Wild fermentation occurs in open top fermenters with pigéage (grape stomping) twice daily.
The wine is gravity fed to seasoned French oak barrels and racked after malolactic fermentation. It matures for 18 months and is racked again prior to bottling.
Dark crimson, By Farr Farrside Pinot Noir is edgy yet delicate, with dark fruit flavours and spicy minerality. Cellaring potential is seven years.
