Hay Shed Hill Cabernet Sauvignon is sourced from the winery's low yielding, dry grown vineyard at Wilyabrup in Margaret River. The fruit is harvested at optimum ripeness.

The grapes are destemmed into open topped vessels for fermentation on skins, receiving traditional pump overs. Post ferment the wine is left on skins for a further 10 days. It then matures in French oak barrels for around 12 months.

Dark red, Hay Shed Hill Cabernet Sauvignon has intense ripe fruit weight with an elegant structure. Cellaring potential is 10 years.
