Hanging Rock Winery Jim Jim Sauvignon Blanc is sourced from the winery's Jim Jim property in the Macedon Ranges. It is named after a nearby small mountain.
The fruit is picked in three stages: slightly underripe to provide acidity, at perfect ripeness, and slightly overripe to provide tropical flavours.
The grapes are whole bunch pressed, ensuring a high degree of clarity in the juice. A small parcel is barrel fermented in new French oak to add complexity to the final wine; the remainder is cool fermented and stored in stainless steel tanks.
To preserve varietal character, the wine is bottled as soon as possible after fermentation.
Pale straw, Hanging Rock Winery Jim Jim Sauvignon Blanc has minerality, tropical fruit flavours and a crisp, refreshing finish. Cellaring potential is three years.
