Hanging Rock Winery Heathcote Shiraz is drawn from Athol's Paddock Vineyard in Heathcote. It was planted in 1992 with the help of Athol Guy of The Seekers fame.
The dry grown, naturally low yielding vines are situated on a deep strip of ancient, red Cambrian soil. These soils give Heathcote Shiraz its distinctive character.
The small, intensely flavoured grapes are handpicked and treated carefully during vinification to avoid extracting harsh tannins. They are wild yeast fermented, typically as a mix of whole berries and crushed fruit.
Though the winemaking varies year to year, it often includes fermentation in new oak and extended time on skins. The wine matures in new and seasoned oak barrels for 18 months.
Deep red purple, Hanging Rock Winery Heathcote Shiraz has layers of ripe dark fruit flavours and fine, persistent tannins. Cellaring potential is 10 years.
