Giant Steps Yarra Valley Pinot Noir is a blend of fruit from the winery's Yarra Valley vineyards: Sexton, Tarraford, Applejack and Primavera. Some vintages include fruit from Central Otago in New Zealand.
The handpicked grapes chill overnight and are cold soaked. Most are destemmed, with a portion left as whole bunches. After several days, the fruit warms for wild fermentation in both stainless steel and oak fermenters.
The wine matures for eight months in French oak barriques and 4,000 litre oak vats. It is bottled via gravity without fining or filtration.
Reddish purple, Giant Steps Yarra Valley Pinot Noir is fruit driven with fine tannins and subtle herbal notes. Cellaring potential is six years.
