Beechworth Chardonnay
Wine
Eldorado Road Beechworth Chardonnay is sourced from two Beechworth vineyards, one at 550 metres elevation and the other at 400 metres, both sited on white granite soils.
Most of the fruit is from the higher altitude site, which produces Chardonnay with distinct minerality. The lower vineyard parcel brings an element of funk to the wine, alongside trademark Beechworth generosity.
Minimal intervention prevails at the winery. The fruit is gently whole bunch pressed to seasoned French oak barrels for fermentation with a mix of wild and cultured yeasts. Malolactic fermentation is restricted to a small number of barrels.
The wine spends 10 months ageing on full lees with intermittent stirring. After a light filtration the wine is bottled, where it rests for several months prior to release.
Deep yellow, Eldorado Road Beechworth Chardonnay has stone fruit flavours, natural mineral acidity and texture from its time on lees. Cellaring potential is five years.
