Wine
Baillieu Vineyard Pinot Noir is grown on the winery's Bulldog Run property on the Mornington Peninsula. This north facing site captures valuable sunshine, creating the perfect ripening conditions for Pinot Noir.
The fruit is hand picked and destemmed, undergoing a few days of cool maceration before natural fermentation begins. Post ferment the wine spends two weeks on skins, then is pressed to French oak barrels for malolactic fermentation and maturation.
Deep red, Baillieu Vineyard Pinot Noir is rich and fruit driven with dark plum flavours, gentle oak complexity and an earthy finish. Cellaring potential is five years.
