Old Vine Estate Shiraz

Taltarni Old Vine Estate Shiraz is sourced from the winery's original block of Pyrenees Shiraz planted in the late 1960s. The fruit is harvested in the cool of the morning.
From the moment it arrives at the winery, this special parcel of Shiraz is handled separately. It is crushed into a small open top fermenter and inoculated with yeast.
During fermentation, the cap of grape skins is kept submerged to extract silky tannins and flavours. The ferment is kept at moderate temperatures to ensure delicacy in the wine.
Malolactic fermentation begins in the fermenter and is completed in new and seasoned French oak barrels. After 18 months of maturation the wine is bottled.
Deep purple, Taltarni Old Vine Estate Shiraz is medium bodied with layers of spicy fruit flavours, old vine complexity and silky tannins. Cellaring potential is 15 years.
