Estate Cabernet Sauvignon

Taltarni Estate Cabernet Sauvignon is made with Pyrenees Cabernet grown on the estate’s oldest blocks, planted in 1969. Small additions of Merlot, Shiraz or Petit Verdot complete the blend.
The fruit is destemmed but not crushed, remaining as whole berries to minimize any mechanical impact. The parcels are simultaneously inoculated for alcoholic and malolactic fermentation in small open top fermenters.
After 10 days on skins to bring the aromatics and structure into balance, the wine is pressed. Maturation occurs in new and seasoned French oak barrels for 14 months.
Vibrant red purple, Taltarni Estate Cabernet Sauvignon has rich blue fruit flavours and a round, velvety tannin finish. Cellaring potential is 10 years.
