Petaluma B&V Vineyard Shiraz draws from the western escarpment of Mount Barker on the eastern edge of the Adelaide Hills. The certified organic B&V Vineyard was planted here in 1992.
The climate – hot during the day and cold at night – and micaceous schist soils closely resemble the conditions of Côte Rôtie in the northern Rhône Valley in France, renowned for its Shiraz.
The fruit is destemmed, crushed and cold soaked. It is then inoculated with yeast for fermentation, which occurs in hand plunged open fermenters and headed down fermenters that are pumped over daily.
As the juice reaches dryness, it is inoculated for malolactic fermentation and remains on skins for two weeks. The wine is then pressed and fed to 70% new French oak barrels for maturation.
Dark red, Petaluma B&V Vineyard Shiraz is supple and dry with ripe red fruit flavours, fragrant spice and abundant soft tannins. Cellaring potential is 10 years.
