Reserve Chardonnay

Ashbrook Estate Reserve Chardonnay draws from five mature estate blocks in Wilyabrup, Margaret River. Each is handpicked at dawn over several days to capture the fruit's optimal flavour.

The grapes are destemmed and pressed. After settling in temperature controlled stainless steel tanks, the juice is inoculated with pure yeast cultures. Once the ferment is underway it is racked to new French oak barrels.

The wine matures on lees undisturbed for eight months. Malolactic fermentation and lees stirring are avoided to retain the fresh primary fruit flavours central to Ashbrook Estate's style.

Barrels are selected for the final blend. The wine is then bottled and aged in the winery's underground cellar for several years before release.

Bright yellow, Ashbrook Estate Reserve Chardonnay has stone fruit flavours that run long and deep, with focused acidity and a backbone of oak. Cellaring potential is five years.
