Bird in Hand Riesling is sourced from a single vineyard at Stanley Flat in the Clare Valley, a cool climate region renowned for its Riesling.
The handpicked fruit is whole bunch pressed. The juice is given a long, cool fermentation for 12 days. The wine is left on light lees for several weeks, then bottled young and fresh.
Straw green, Bird in Hand Riesling has intense citrus flavours driven by crisp mineral acidity. Cellaring potential is six years.
