Montalto Estate Shiraz is handpicked from the estate's warmer vineyard in Tuerong at the northern end of the cool climate Mornington Peninsula.
Most of the fruit is destemmed into open fermenters and cold soaked before wild fermentation. The remainder ferments as whole bunches for two weeks, then destemmed and fermented on skins to dryness.
The wine is transferred to new and seasoned French oak barrels for malolactic fermentation and 11 months of maturation.
Deep crimson, Montalto Estate Shiraz merges fragrant dark fruit flavours with gentle oak and silken tannins. Cellaring potential is 10 years.
