Wine
Seville Estate Dr McMahon Shiraz is named after Dr Peter G. McMahon, who first planted Seville Estate in 1972. The wine is sourced purely from his original 1972 plantings.
The tiny block of vines produces low yields of small berries and bunches. All the fruit is selectively handpicked into small buckets in the cool early morning.
It is placed directly into new French oak barrels as whole bunches without destemming. The fruit is left on skins for 60-70 days, during which wild fermentation and wild malolactic fermentation take place.
The wine is then drained and pressed back to barrel where it is matured for 10-12 months. It is bottled without fining or filtration.
Rose red with a purple hue, Seville Estate Dr McMahon Shiraz is full bodied with lush red berry flavours in equilibrium with the tannins. Cellaring potential is 10 years.
