Clairault Margaret River Chardonnay

Clairault Margaret River Chardonnay is sourced from premium estate grown vineyards in the Margaret River region of Western Australia.

The grapes are pressed as a mix of whole bunches and cold crushed fruit. The juice is cold settled and racked, leaving only the most delicate grape solids to develop texture and aromatics in the wine.

Fermentation occurs in new, second and third fill French oak barrels. Partial malolactic fermentation builds complexity; the remaining wine is sulphured. The lees are stirred fortnightly over nine months of maturation.

The wine is clarified prior to bottling.

Pale green, Clairault Margaret River Chardonnay has lively citrus and dense stone fruit flavours. Its natural acidity and fine textures lead to a long finish. Cellaring potential is eight years.
