Juniper Estate Heritage Aquitaine Blanc is a blend of two thirds Sauvignon Blanc from Forest Grove and one third Semillon from Wilyabrup, all harvested by hand.

The winemaking is designed to tame the overtly fruity characters of the Sauvignon Blanc. The grapes are whole bunch pressed straight to French oak barrels, around 20% new, for wild yeast fermentation.

Ten months of barrel ageing follows, with monthly lees stirring to enhance mouthfeel and length.

Pale gold, Juniper Estate Heritage Aquitaine Blanc is smooth and layered, the fruit woven with saline acidity and subtle oak spice. Cellaring potential is five years.
