Yalumba FSW8B Botrytis Viognier is made from a select patch of Viognier in Wrattonbully. The vines are encouraged to grow a dense canopy, reducing airflow and promoting Botrytis cinerea growth.
Autumn in Wrattonbully means dewy mornings, soft mists and warm sun on ripe grapes. These conditions are perfect for Botrytis, a special kind of fungus that intensifies the sweetness and complexity of the fruit.
It requires several pressings to liberate the viscous nectar from the grapes. The juice can be difficult to ferment, so a special yeast is used for fermentation to allow the wine to find its natural balance and ideal sugar level.
A golden nectar, Yalumba FSW8B Botrytis Viognier is an opulent, luscious dessert wine with lingering flavours and textured length. Cellaring potential is five years.
