Two Hands Wines Yacca Block Eden Valley Shiraz draws from a site perched high on a hillside in the Eden Valley, surrounded by ancient Yaccas, or grass plants.
The vineyard's high altitude promotes a slow ripening period that leads to soft and elegant Shiraz. The soil is a mix of quartz and ironstone.
For fermentation, typically half the fruit is crushed and destemmed; 40% is included as whole berries; and 10% is left as whole bunches. The ferment is hand plunged three times daily.
Once the wine is pressed, both the free run and pressings portions are blended in tank. It is then racked off gross lees to French oak barrels for malolactic fermentation and 18 months of maturation.
Deep red, Two Hands Wines Yacca Block Eden Valley Shiraz has vibrant primary fruit flavours and fresh acidity. Chalky, savoury tannins roll through to a long, spicy finish.
A refined Eden Valley Shiraz. Cellaring potential is 15 years.
