10X Barrel Fermented Sauvignon Blanc

Ten Minutes by Tractor 10X Barrel Fermented Sauvignon Blanc is typically grown at the Judd Vineyard on the Mornington Peninsula, the winery's steepest and highest site.

The grapes are hand harvested and whole bunch pressed. The unsettled juice is wild yeast fermented in seasoned French oak barrels. Partial malolactic fermentation follows.

Maturation occurs in barrel without lees stirring, keeping the flavours fresh and taut. If necessary, the wine is lightly fined and filtered prior to bottling.

Straw green, Ten Minutes by Tractor 10X Barrel Fermented Sauvignon Blanc balances texture, complexity and underlying natural acidity. Cellaring potential is five years.
