Clare Valley Sparkling Shiraz

Ashton Hills Clare Valley Sparkling Shiraz is sourced from Wendouree's revered Shiraz vineyard. The vines, many planted in 1919, are dry grown and produce low yields of intensely flavoured fruit.

The handpicked grapes are destemmed using a small destemmer that keeps the whole berries intact. Fermentation occurs in open air tanks with regular hand plunging before the skins are basket pressed.

After four years of ageing in seasoned French oak, the wine undergoes méthode traditionnelle secondary fermentation in bottle. It is disgorged after 15 months. The wine is made only in the best vintages.

Ruby red, Ashton Hills Clare Valley Sparkling Shiraz is a perfect balance of mature berry flavours, power and finesse.

One of Australia's finest sparkling reds. Cellaring potential is 12 years.
