Paladin Hill Matrix

Wills Domain Paladin Hill Matrix is a blend of the best batches of estate grown Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. The fruit is handpicked in the cool of the morning.

After gentle destemming, the grapes are cold soaked prior to inoculation with a cultured yeast strain. The temperature is kept relatively cool during fermentation.

Post ferment, the wine macerates on skins for 15 days to maximize the extraction of colour and generous soft tannins. It is then pressed directly to barrels and inoculated for malolactic fermentation.

The wine is racked and returned to barrel prior to a cool maturation. Finally it is blended, stabilized and bottled.

Brick red with a purple hue, Wills Domain Paladin Hill Matrix speaks volumes of fresh berry and violet flavours with fine acidity and dry, chalky tannins. Cellaring potential is 10 years.
