Eightfold Shiraz

Wills Domain Eightfold Shiraz is sourced from estate plantings atop the rolling hills of the Gunyulgup Valley in Margaret River, receiving the calming maritime influence of the Indian Ocean

The fruit is gently destemmed but the berries are kept whole. During fermentation, the temperature is kept to a cool 22°C to retain freshness and allow for gentle extraction of tannin and flavour.

After 10 days of twice daily pump overs, the wine is gently separated from the skins. It is transferred to new and seasoned French oak barrels to complete fermentation and age for 12 months.

Deep cherry red, Wills Domain Eightfold Shiraz offers an ensemble of red fruit flavours with crunchy acidity, fine tannins and a persistent finish. Cellaring potential is 10 years.
