Eightfold Cabernet Sauvignon

Wills Domain Eightfold Cabernet Sauvignon is sourced from estate plantings on sun drenched northern and western slopes of Margaret River, overlooking the Indian Ocean.

The fruit is destemmed and lightly crushed in the early hours of the morning. During fermentation the juice is held at a maximum of 25°C and receives rigorous pump overs three times a day.

After two weeks on skins the wine is gently separated from the skins and transferred to French oak barrels, where it completes fermentation. It is then aged for nine months before blending, light fining and filtration.

Deep brick red, Wills Domain Eightfold Cabernet Sauvignon has supple, mouth coating black fruit flavours, velour tannins and brisk natural acidity. Cellaring potential is 10 years.
