UMAMU Cabernet Sauvignon draws from the winery's original 1978 and 1982 plantings. The vineyard is located a short distance east of Margaret River.
After fermentation, the wine matures for 18 months in a variety of French oak barrels, which provide texture to the wine without dominating the flavour or the structure. It is then bottled and aged further prior to release.
Crimson purple, UMAMU Cabernet Sauvignon's dark fruit flavours and silky tannins lead to a long finish. Cellaring potential is 10 years.
