Scotchmans Hill Chardonnay is sourced from the best estate vineyards on the Bellarine Peninsula. They grow in self mulching black soils derived from tertiary basalt.
The fruit is whole bunch pressed with the free run juice run to new and 1-4 year old French oak barrels. Light solids are retained for wild yeast fermentation. The yeast lees are stirred monthly over 12 months of ageing.
Pale straw, Scotchmans Hill Chardonnay has white peach and citrus flavours with a mineral edge and nutty oak finish. Cellaring potential is five years.
