Scorpo Wines Aubaine Chardonnay is named after the Burgundian synonym for Chardonnay. The grapes are handpicked from the winery's vineyard at Merricks North.

The fruit is whole bunch pressed mostly to seasoned French oak barrels, though around 5% is sent to new oak. The juice is fermented with wild yeasts then sulphured to prevent malolactic fermentation.

After 12 months of maturation on lees without stirring, the wine is bottled.

Golden straw, Scorpo Wines Aubaine Chardonnay has tightly wound citrus and melon flavours with a fine, chalky finish. Cellaring potential is five years.
