Golden Plains Chardonnay
Wine
Provenance Golden Plains Chardonnay blends fruit from several Geelong vineyards, as well as sites in surrounding regions including Ballarat and Henty.
The vineyards are hand harvested when the grapes reach a balance of natural acidity and fruit flavour.
The fruit is whole bunch pressed and the juice undergoes indigenous yeast fermentation in new and seasoned French oak barrels. Eight months of maturation on yeast lees follows.
The wine is then blended to tank and left on yeast lees for several months further prior to bottling.
Straw green, Provenance Golden Plains Chardonnay has intense fruit flavours, natural acidity and a long, chalky finish. Cellaring potential is five years.
