Wine
Poacher's Ridge Shiraz draws from the dry grown estate vineyard just outside Mount Barker in Great Southern. The fruit is handpicked at optimum ripeness.
The bunches are destemmed and crushed, then pumped into an overhead fermenter. The ferment is pumped over regularly, incorporating oxygen and extracting tannins, flavour and colour from the grape skins.
After post ferment maceration, the wine is racked into French oak barrels, one third new. It matures for 15-18 months before being pumped into tank prior to bottling.
Deep ruby red, Poacher's Ridge Shiraz has mouth filling dark fruit flavours with cool climate spice and structured tannins. Cellaring potential is 10 years.
