Paxton MV Shiraz – McLaren Vale or Multiple Vineyard Shiraz – blends fruit from four of Paxton's biodynamic vineyards around McLaren Vale.
Individual parcels from each vineyard are harvested when they reach optimum sugar and flavour equilibrium. They are kept separate throughout the winemaking process.
The fruit is destemmed and fermented in open and static fermenters. Each parcel is plunged and pumped over twice a day for 14 days to extract colour, flavour and tannin structure.
Once pressed the wine matures in new and seasoned French and American oak barrels for 12 months. The parcels are then blended and bottled.
Purple red, Paxton MV Shiraz is full bodied with integrated dark fruit and oak flavours providing seamless texture and tannins. Cellaring potential is 10 years.
