Wine
Paxton EJ Shiraz is grown on the winery's cool, low lying Thomas Block, planted in the late 1800s. It is one of the oldest surviving vineyards in McLaren Vale.
The grapes are handpicked at the optimum equilibrium of sugar and flavour. They are open fermented with gentle hand plunging and careful temperature control.
The wine remains on skins for extended maceration. Once pressed it is fed by gravity into new and seasoned French oak barrels to mature for up to 22 months. It is then gravity fed to tank in preparation for bottling.
Once bottled, the wine is cellared for at least 12 months prior to release. It is the winery's leading wine, named after the Paxton family matriarch Elizabeth Jean.
Deep crimson purple, Paxton EJ Shiraz has generous old vine fruit concentration, fine silky tannins and a hint of French oak. Cellaring potential is 20 years.
