Heathcote Shiraz

Mitchelton Heathcote Shiraz is a blend of premium fruit parcels handpicked from estate vines in Heathcote. Most of the soil under vine is Cambrian: deep, red and calcium rich.
The grapes are gently destemmed and open fermented. Careful daily hand plunging is used to extract flavour. Post ferment, the wine remains on skins to soften and meld the fruit characters and tannins.
The wine is then pressed off skins and transferred to new and seasoned French oak barrels for malolactic fermentation. After 24 months of maturation, the final blend is assembled.
Dark crimson red, Mitchelton Heathcote Shiraz has layers of dark fruit and fine grained French oak with soft, supple fruit tannins adding length. Cellaring potential is 10 years.
