Single Vineyard Chardonnay

Dominique Portet Single Vineyard Chardonnay is a typical cool climate Chardonnay. The grapes are sourced from a mature vineyard in the Upper Yarra Valley at an altitude of 350 metres.
The vines grow on volcanic red soils on a steep, fast draining slope. The elevation makes for cooler growing conditions than those on the valley floor. The cool nights slow the ripening and help the fruit retain acidity.
The handpicked grapes are gently whole bunch pressed before fermenting in new and seasoned French oak puncheons. In some puncheons, the lees are stirred to build texture and complexity.
Bright yellow, Dominique Portet Single Vineyard Chardonnay has citrus and stone fruit flavours, zesty natural acidity and a long finish. Cellaring potential is six years.
