Jericho Wines Adelaide Hills Fiano is a blend of two small neighbouring vineyards at Kuitpo in the southern Adelaide Hills. The sites are harvested at slightly different times to ensure the fruit is fully ripe.
The winemaking takes a simple, minimal intervention approach to highlight the fruit's varietal character. Fermentation occurs in stainless steel on fine lees to achieve a balance of freshness and complexity. The wine is bottled soon after fermentation.
Straw green, Jericho Wines Adelaide Hills Fiano has freshly cut stone fruit flavours with citrus notes, texture and a crisp acidity to finish. Cellaring potential is two years.
