Reserve Chardonnay
Wine
Fermoy Estate Reserve Chardonnay draws from the estate vineyard at Wilyabrup in Margaret River. The fruit is handpicked and promptly transported to the winery next door to the vineyard.
The grapes are whole bunch pressed directly to French oak barrels for wild yeast fermentation. Partial malolactic fermentation is permitted to soften the acidity.
Maturation occurs over 10 months with regular lees stirring to build texture and complexity. Barrels are individually selected for blending. The wine is heat and cold stabilized, then bottled with minimal fining and filtration.
Pale gold, Fermoy Estate Reserve Chardonnay has stone fruit flavours with sea spray minerality and precise citrus acidity. Cellaring potential is six years.
