Yarra Yering Dry Red Wine No. 3 is made from a 1990 New Territories planting of classic Portuguese grapes. They grow on a rocky terraced hillside in a natural amphitheatre, at the highest and most southerly point of the Yarra Yering vineyard.
Dry Red Wine No. 3 is a unique blend of six Portuguese varieties: typically 44% Touriga Naçional, 30% Tinta Cao, 10% Tinta Roriz, 6% Tinta Amarela, 6% Alvarelhao and 4% Sousao. Barely enough fruit is grown to fill a small fermenter.
The handpicked grapes are destemmed and open fermented with twice daily foot stomping (as they do in Portugal) to extract tannins. Gentle pressing and maturation in seasoned oak barrels follows. The wine is bottled via gravity without filtration.
Bright garnet, Yarra Yering Dry Red Wine No. 3's perfume immediately commands attention. It is a spiced wine with the six varieties all integrated. Its firm tannins speak of the seriousness of the wine. Cellaring potential is eight years.
