In 1973 Dr Bailey Carrodus produced the first vintage of Dry Red Wine No. 2. Inspired by the wines of France's Rhône Valley, it is a Shiraz dominant blend with small amounts of Mataro, Viognier and Marsanne.
The Shiraz and Marsanne are from the original 1969 plantings; the Mataro and Viognier were planted from 1984 to 1995. All are grown unirrigated.
The handpicked grapes are destemmed directly to open fermenters. As many whole berries as possible are retained to encourage perfume. Stalks are added back for structure and aroma.
The wine is aged for 18 months in new and seasoned French oak barriques before blending and bottling.
Inky garnet, Yarra Yering Dry Red Wine No. 2 has restrained tannins and beautiful balance. Its fragrance and headiness create intense perfumes. No shrinking violet! Cellaring potential is 20 years.
