Woodlands Cabernet Sauvignon draws from the winery’s original 1973 Cabernet plantings at Wilyabrup, one of the first five vineyards to be planted in the Margaret River wine region.
A special Woodlands wine, each year the Cabernet Sauvignon is given the name of a family member or friend of the Watson family.
Delicacy underlies every aspect of the winemaking. A vibrating hopper gently delivers the fruit to the destemmer. The destemmer itself is state-of-the-art, shaking rather than beating the bunches to separate the berries.
As in the leading châteaux of Bordeaux the fruit is then passed over a vibrating sorting table, enabling the grapes to be sorted berry by berry. After crushing, fermentation occurs in small closed fermenters.
Post ferment, the Cabernet sees extended maceration on skins. The wine then matures in new French oak barrels for 18 months. Small amounts of Malbec and Cabernet Franc also comprise the final blend.
Dark crimson, Woodlands Cabernet Sauvignon is rich, supple and seamless, with a powerful core of old vine Cabernet fruit sheathed in velvety tannins and balanced oak.
Timeless and elegant. Cellaring potential is 20 years.
