Wine
Vasse Felix Syrah is a modern, cool climate Australian Shiraz, made in small volumes. It draws fruit from some of the oldest Shiraz vines in Margaret River.
A portion of the fruit is carefully tipped into an oak vat as whole bunches. The vat is sealed, filled with carbon dioxide and left for one week. The fruit is then foot stomped to begin fermentation.
The remaining grapes are gently destemmed to retain as many whole berries as possible. Only wild yeasts are used for fermentation. The juice spends an average of 15 days on skins.
The wine is then basket pressed to predominantly seasoned French oak, ensuring the wine's fine fruit perfumes are retained. It matures for 12 months prior to bottling.
Bright garnet, Vasse Felix Syrah has fresh, spicy red berry flavours and fine velvety tannins, finishing light and dry with a lingering perfume. Cellaring potential is 10 years.
