Vasse Felix Heytesbury Chardonnay is a selection of the most striking parcels of fruit each vintage, drawn from small blocks where the interplay of vine clone, aspect and soil create stunning varietal character.

The grapes are gently pressed and the cloudy juice is transferred directly to French oak barriques, around 50% new. Only wild yeasts are used for fermentation.

Each barrel is stirred throughout nine months of maturation, allowing the yeast lees to impart complexity. Just enough malolactic fermentation is permitted to bring the bright natural acidity into balance.

Pale straw green, Vasse Felix Heytesbury Chardonnay shows immense strength with a wonderful acid line and a fine structural edge. Cellaring potential is seven years.
